A yummy easy dinner, gluten free and great for vegetarians.

1/2 head of cauliflower
1 x zucchini
200g sliced mushrooms
250g of mascarpone cheese
100g mozzarella cheese
1 x table spoon of Butter
- Cut up all ingredients and fry in butter in a pan. Cover with lid.
- Once ingredients are soft add the 250g of mascarpone cheese and mix through well until all vegetables are covered.
- Cover with lid. Simmer for 5 mins.
- Add the mozzarella cheese on top and simmer for another 5 mins.
- Mix all ingredients together- serve hot
