Mini Cheese, onion, mushroom and bacon frittatas.
ALSO KIDS LOVE THEM!
Prepping time: 10 mins
Cooking time: 30 mins
You will need a cup cake tray (12 piece), measuring jug, an oven (mine is electric) and a frying pan.
- 6 eggs
- 1/2 table spoon of butter
- 1 handful of diced bacon
- 1/2 brown onion sliced
- 4 button mushrooms diced
- 100g of shredded mozzarella cheese
Preheat oven to 180’c
Lightly grease a 12 piece cup cake tray with butter this will stop the eggs from sticking to the pan.
In a non stick frying pan add 1/2 table spoon of butter and heat pan on medium heat. When butter is melted throw in the sliced onion, cook until soft. When onion is half cooked throw in the diced mushrooms and bacon pieces. Let them all cook together.
In a bowl add 6 eggs and whisk well i add a little bit of cracked pepper and Himalayan salt for flavour).
When ingredients in frying pan is cooked let them cool for 5 minutes and then add them to a measuring jug. Pour the whisked eggs into the measuring jug to (the jug is great for pouring mixture into the cup cake tray). Add the 100 grams of cheese. Stir mixture together.
In your greased cup cake tray pour the mixture in to each space evenly – only fill them to half way. This mixture is for exactly 12 cup cake sized (if you want 6 big ones you can use a 6 piece muffin tray)
Make sure the bacon pieces are spread out evenly in the cups they are heavy and sit in the bottom of the measuring jug. Put in the oven and let it cook for 30 minutes. keep an eye on the mixture close to the end just so the eggs dont burn on top. After 30 mins take our tray place on kitchen bench for 5 mins to cool.
After 5 minutes use a butter knife to circle around the edges of each frittata to loosen and then help them pop out. Enjoy warm! Great snack cold too!
You can also add spinach, mushroom, ham, fetta cheese.. anything you like!
1.2.3. Pizza (no baking – no wheat!)
I love pizza and couldn’t imagine a world without it! So I was very excited to make this quick and easy dish that simply is a keto approved pizza without the carb sauce and base! And you can add any keto toppings you like! For this pizza I just made a simple meat lovers one the kids and I both enjoyed.
Makes: 1 small pizza 20cm round
Prep time: 5 mins
Cooking time: 10 mins
- 1/2 a cabanossi stick (sliced)
- 1/2 teas spoon of butter/ coconut oil
- 100 grams of cooked beef mince (I’m using left over mince from a previous meal it was just fried on the stove with pepper and minced garlic added to it)
- 1/2 brown or red onion
- 1 handful of diced bacon
- 250 grams of shredded mozzarella cheese
In a frying pan (preferably non stick) fry the onion, bacon and sliced cabanossi stick. Fry ingredients until they are all cooked nicely.
When all cooked, spread them out evenly in the pan (like topping a pizza)
Then grab your 250 grams of shredded mozzarella cheese and cover all of the pan evenly. Make sure heat is on medium. It should take about 5 minutes for the cheese to melt and cover all of the ingredients in the pan. The cheese will start getting crunchy and brown around the edges this means its ready! turn off the stove and let the pizza cool for 5 mins in the pan so the cheese starts to firm up. Next step must be done fast! Have your plate ready next to the frying pan and with a spatula / flipper flip the pizza out of the pan onto your plat so the increase is facing up wards. Place the plate in the fridge for 5 minutes as the cheese is still hot and melting. and thats it! After the cheese has cooled and harden to be able to cut into pizza slices its good to eat! Told you easy as 1..2..3!
I do heat the pizza up for 10 seconds in the microwave to warm it up and it tastes amazing! It is a little oily from all that cheese so you can place the pizza on a paper towel when cooled (not hot) to drain some oil if you like.
Veggie Bake with Beef Mince and Mozzarella Cheese
Theres no excuse that you ‘have no idea what to make on keto’ its very simple, grab a bunch of whole foods like vegetables and meat and cheese and cook them all together for amazing taste! Today using my left over ingredients I will show you what I mean…
Makes 6 servings
Prepping time: 15 mins
Cooking time: 40 mins
You will need: A frying pan, oven and and round (or rectangle) oven proof dish I used a round glass dish today.
Preheat oven to 200’c
- 1 red capsicum sliced into layers
- 1/2 egg plant sliced
- 1 zucchini sliced long ways
- 1 carrot – grated
- 250g shredded mozzarella cheese
- 500g beef mince
- 1/2 teas spoon of butter/ coconut oil
- A pinch of Himalayan salt and cracked pepper
- 1 table spoon of minced garlic
- 1 teaspoon of paprika spice (for flavour, you can add any seasoning you like)
In a frying pan add mince garlic, all of the beef mince, season with the salt and pepper and cook on medium heat until mince starts going brown. When mince in cooked turn off stove.
Slice up all vegetables (egg plant, capsicum and zucchini) long ways like lasagna sheets.
In the glass oven proof dish start layering out the ingredients.
- Start on the bottom in this order. A handful of mozzarella cheese to cover the bottom of the dish. Then add the red capsicum slices (DO NOT over lap them on top of each other just make one layer), then add a layer of mince meat, then add the egg plant slices, then add another layer of shredded cheese, add the zucchini slices add the left over capsicum, add more mince, add the rest of over egg plant, all of the grated carrot, add the rest of the mince, sprinkle the paprika over the mince and then add the left over cheese on top. Looking through the dish it should have a layered vegetable lasagna.
Cover the dish with foil and bake in the oven for 40 minutes at 200’c.
After 40 minutes take the meal out of the oven and remove the foil, let the dish cool a little before serving.
NOTE: You dont need to add sauce or oil to this meal, the dish is wet enough thanks to the excess oil from the beef mince and mozzarella cheese.

Easy Cheesy Cauliflower Bake
I love cauliflower, low carb, low calories and its yum! this easy dish will please any guests and there’s so much cheese the kids will love it!
Prep time: 5 minutes
Cooking time: 30 minutes
Makes: 6 servings
Preheat oven to: 180’c
- 1/2 a head of cauliflower
- 1 table spoon of butter
- a pinch of Himalayan salt and cracked pepper
- a teaspoon of minced garlic
- 300 grams of shredded mozzarella or tasty cheese
Cut the cauliflower into large pieces and place into a microwave safe dish. Cover the pieces with water add a little salt and cover with a lid, place in microwave and cook on high for 8 minutes to make cauliflower pieces soft.
In a oven proof dish (Im using a rectangle one), place the cauliflower pieces on the dish, spread them out so that they are not on top of each other. Next grab a small microwave safe bowl and add a table spoon of butter, the minced garlic and melt in the microwave (30 seconds) mix these together and add the salt and pepper. While the butter mixture is runny and hot pour over the cauliflower pieces.
Using 250 grams of the shredded cheese cover all of the cauliflower pieces. Then cover the dish with foil and place into the oven at 180’c.
Cook for 20 minutes. Remove dish after 20 mins and remove the foil. Cover the cauliflower pieces with the remainder of the cheese and place back in the oven to cook for 10 minutes.
After 10 minutes remove from oven and serve hot!
